Wing Wah Mooncake, an award winner, is the signature cake of Wing Wah Cake Shop since 1950’s
My taste references Mooncake approaching the oval of the full moon (zero), this tasting is subjective.
I serve it with Compagnie Coloniale, Thé Chine Extra, a delicately smoked black tea.
The flavors between the smoky tea and the delicious sweet / salty cake matches perfectly.
The golden crust is thin but consistent enough for an agreable texture.
It is traditionally made with animal fat. Here it is peanut oil.
The white lotus seed paste (蓮蓉, lían róng) is the traditional mooncake filling.
It can be replaced by white bean paste which is less expensive.
The quality Hunan white lotus seeds pastes gives this addictive consistency which is compact and silky.
And this lovely sweet and delicate flavor, so particular to lotus seeds.
At heart, a salted duck egg yolk, with a nearly mealy texture. The contrast with the sweetness is interesting !
Perfect with a sip of tea !
