For an aromatic perfection:

• The grapes are harvested at the coolest hours 4h and 9h !!!

• Skin maceration: A cold infusion of the grape juice and its skin to extract the aromas, (with the risk of extracting less subtle aromas). The fruits must be of excellent quality and the harvest healthy.

• Fermentation at low temperatures and aging on fine lees => fat and complexity.
