Une mousse chocolat au lait infusée à la fève de cacao, une mousse chocolat noir assemblage 75% de cacao, un biscuit léger au cacao subtilement imbibé de Whisky Hibiki, le tout sur un croustillant sablé à la crème de noisettes et de chocolat noir.

I can’t wait to discover the creation born from a collaboration between my first favorite chocolatier and my first whiskey (Japanese in addition).
Jean-Paul Hévin has created a pastry with a design recalling the traditional whiskey glass.
A milk chocolate mousse infused with cocoa bean, a dark chocolate mousse blended with 75% cocoa, a light cocoa light cake subtly soaked with Hibiki Whiskey, all on a crispy shortbread with hazelnut cream and dark chocolate.

The cocoa cookie is airy but delicious.
I usually don’t really like alcoholic pastries because alcohol predominates flavors.
Very delicately soaked in Hibiki Whiskey => exquisite flavors!
The perfect balance: chocolate & hibiki flavors, different textures (aerial of the cake, creaminess of the cream, ultra-thin layer of crunchy milk chocolate => divine …)
A pastry, light as a cloud. And this long lasting hazelnuts and cocoa flavors.
This “Hibiki” pastry reflects Jean-Paul Hévin’s deep attachment to Japan.
It reminds me of the pastries that Japanese people love. A light cake, creamy mosses and delicate, airy flavors.
