We have all tasted rāmen with a conventional broth with soy sauce or miso.
Let’s taste the authentic flavors tonkotsu ramen of Hakata Choten. It is different !
Hakata Tonkotsu ?
Literally “pork bone”, the cleaned, shredded bones are slow cooked (over 24 hours), until dissolved!
The result provides a rich, blurred and almost creamy broth.
It is very nutritious with rich, deep flavors. Stop feeling guilty, there is a lot of calcium and phosphorus !
Tonkotsu Ramen with chashu (simmered pork belly)
This Chinese white broth (白汤 | bái Tang), became tonkostu (豚 骨), a specialty of Hakata district (Fukuoka).
Comforting and perfect for winter days ahead.
The fresh cooked noodles are thin and cooked on order. It will be homemade soon.
I highly recommend this one. It allows to taste all the different flavors: red spicy miso, black hot sauce grilled garlic, roast pork and egg ajitama.
Gyoza
The Hakata Choten gyoza are delicious.
The very thin, grilled wrappers are crispy and are filled with a tasty stuffing. A little happiness.
They even received the first prize of gyoza national contest in 2004.
Gyoza with chef’s spicy miso. With or without the delicious miso, the gyoza are excellent.

S’y rendre vers le début ou la fin de service pour éviter l’attente.
