“Pizza” comes from “pinsa”(from the Latin verb “pinsere “, meaning lengthen or extend). La pinsa is considered as the ancestor of pizza.

Cheffe Michela recipe of Il Grano’s pinsa is inspired by an ancient recipe, with a long-fermented dough (48 to 72 hours).
The ancient wheat, soy and rice flour makes a very light and moistured dough.

La recette de pinsa de Il Grano est inspiré par une recette ancienne, à la pâte fermentée longue ( 48 à 72 heures ).
La pâte est très légère grâce au mélange de farine de blé ancien, de soja et de riz.
