Café des Ministères

Nestled behind the Ministry of Foreign Affairs, the Ministries Café.
A restaurant without ostentation taken over in 2019 by Roxane [chef de chambre & cellar] and Jean Sévègnes [chef de cuisine].
A menu which that looks classic at first glance … but with creative touches. No superfluous or fashionable ingredients, nor useless pageantry.

Farm poultry, Sweetbreads, Spinach and black truffle. € 41
This “charcuterie pâtissière”, heritage of French gastronomy is back!
Very differente from the industrial ones filled with tasteless béchamel from low quality butchers.
The puff pastry is homemade! So much work !
🍷 Paired with Côte de la Houssaye 2016 from Domaine Ogereau Anjou-Villages, France
Fleshy and enveloping black fruits notes !

WOOOW so generous in truffles !
A real delight ! A perfectly cooked poultry & sweetbread, consistent but with a silky sauce.
A great classic, but with a twist, with a spinach heart refreshing the dish!
My dear friend Jean-Pierre Saccani [Spirits expert] but also in Vol en Vent:
“A Vol au Vent, Without our grandmothers’ sauce boat but much more generous in sweetbread!“

Les notes de fruits rouges, de torréfaction et d’épices douces se marient parfaitement avec le dessert.

Caribbean chocolate mousse 66% [Valrhona],, with its swirl of salted butter caramel. € 9
Not enough chocolaty for my taste [but I like 80-100% cocoa].
The mousse is excellent, light, creamy and well balanced in sugar. It will suit the palate which prefers not too full-bodied chocolates!
I was no longer hungry when he arrived but quickly finished !!!
🍷: Château Coutet 2016 St Emilion Grand Cru [Organic & Magnum] !
The notes of red fruit, roasting and sweet spices pairs perfectly with the dessert.
