A very pretty, tasty and fresh present (Omiyagegashi -土産菓子) from Kyoto (Kyogashi-京菓子).
The original Yatsuhashi is the popular regional product (Meibutsu-名物).
What is Yatsuhashi ?
Yatsuhashi (八ツ橋 = eight bridges) is a Wagashi (和菓子) Japanese confectionery/cake.
Yatsuhashi Kengyo, created the cake (ca 1650) to recycle rice grains which were too small to eat. He was a composer of Koto.
Simple high quality ingredients
Rice, water, sugar, and beans for the filling.
Stone grounded rice flour of Koshihikari variety (越光 – Light of Koshi) a high quality polished translucide rice from Fukui.
The rice is sweet and nutty and used in sushi for it’s light stickiness.
Red beans Azuki
As azuki beans are the central ingredient for a delicious red bean paste, they are from Tokachi Plains (Hokkaido) know for quality azukis. 6 farmers are working in association and rotation work.

Special care is given to the water in the Yatsuhashi making. It is delivered daily from the waterfalls f Uriwari at Wakasa. Called “the sacred water of the forest” by locals, it would be miraculous for fields and have healing powers.
Un soin particulier est accordé à l’eau de l’appareil à Yatsuhashi. Elle est livrée quotidiennement des cascades de Uriwari à Wakasa. Nommée “l’eau sacrée de la forêt” par les habitants, elle serait miraculeuse pour les champs et aurait des pouvoirs de guérison.
